About the trainersLisbon Spoons are a collective of wood lovers who have dedicated themselves to the art of spoon carving. They take a sustainable approach, using wood from pruning, found in nature or from various leftovers. They favour hand tools. About the trainerDeniz Bulgur is a Turkish-German neuroscientist, raised in Germany in a Turkish household where food was a language of its own. Alongside research on the brain, Deniz explores in the kitchen how people have kept and made food for centuries: pickling, fermenting, drying and slow-cooking traditional dishes. Self-taught, Deniz knows where beginners get stuck, and as a scientist explains the reasoning behind each step, so that participants leave with understanding, not just a recipe, along with a few new skills, a jar or two, and the confidence to keep experimenting at home.
This workshop covers the basic principles of preparing, feeding and maintaining a sourdough starter, exploring simple proportions and signs of fermentation.
